Liam Anderson, who was born in Burnley and went to St Augustine’s RC High School and Accrington and Rossendale College, will compete in The Roux Scholarship final on April 14. Now in its 41st year, the competition is widely regarded as "the holy grail" by many in the industry with a host of former winners now running their own restaurants and earning Michelin stars. The competition is being judged by Michel Roux Jnr, Angela Hartnett, Brian Turner and James Martin among others.

Liam now works at Midsummer House, an internationally-acclaimed two Michelin-starred restaurant in Cambridge. The Roux Scholarship regional finals took place at University College Birmingham and University of West London on March 6 and the 18 regional finalists also cooked their recipes that incorporated two gurnard fish, mussels, dulse seaweed and parsnips. The mystery box dessert challenge included a choice of 20 ingredients including cinnamon quills, raspberries, curd cheese and fine ground almonds.



For his main dish, he impressed the judges with his "braised gurnard and quenelle, parsnip and lovage puree, pickled red dulce, jus de cuisson and smoked roe".
